How To Make Eggnog Pie (Quick Overview)
The steps below are just a quick overview of how to make the eggnog pie recipe. The full process in detail is located in the recipe card at the end of the post.
Before making the filling, prepare and bake your pie crust (unless you’ve chosen to use a no-bake pie crust).
Notes About the Crust
Now let’s work on the filling! Start by placing a medium saucepan on the stove (with the heat off) and add the heavy whipping cream, eggnog, and egg yolks. Whisk everything together until it’s nice and smooth.
Turn the heat to medium-high and bring the mixture to a boil, then lower it to a simmer.
Because this recipe uses raw eggs, it’s essential that the mixture is heated up to at least 170 F. This temperature should be easily achieved when bringing the mixture to a boil (which happens at 212 F), but feel free to use a food thermometer at this step for peace of mind.

Mix the sugar, gelatin, nutmeg, and salt in a small bowl. Add that to the saucepan and whisk until it’s all combined.
Let the mixture simmer for about three minutes, then take it off the heat and let it cool for 10 minutes.

Whisk in the bourbon (optional) and vanilla extract, then pour the filling into your baked pie crust. Pop it in the fridge for at least four hours or until it’s fully set.
Cover the top of the pie with plastic wrap directly in contact with the filling to keep skin from forming on the top while refrigerating. (But you’ll later cover the top with whipped cream or Cool Whip, so feel free to skip this suggestion.)

Once the pie filling has firmed up, it’s time for the grand finale: the topping!

Spread some homemade whipped cream or Cool Whip over the top of the pie. Add as little or as much as your heart desires. 🙂

Now it’s time to slice, serve, and enjoy!

- Prepare and bake pie crust (if using a prepared crust, follow the package instructions). While the pie crust is baking, prepare the filling.
Filling Instructions
- With the heat off, place a medium saucepan on the stove and add heavy whipping cream, eggnog, and egg yolks. Whisk until thoroughly combined.
- Turn the heat to medium-high. Bring the mixture to a boil, then turn it down to a simmer. (Because this recipe uses raw eggs, it's important that the mixture is heated up to at least 170 F. This temperature should be easily achieved when bringing the mixture to a boil, but feel free to use a food thermometer at this step for peace of mind.)

- This pie as pictured uses a traditional baked pie crust. You can use a frozen, refrigerated, or homemade pie crust. I typically go with frozen to save time, with my top choice being Wholly Wholesome Organic Traditional Pie Crusts, followed by Marie Callender’s Deep Dish Pastry Pie Shells.
- Want to make this a fully no-bake pie? Go for it! Use your favorite no-bake crust.
