How to Make Snickerdoodle Cookies (Quick Overview)

Grab a mixing bowl and a hand or stand mixer. Cream together the butter and sugar until smooth…

… then beat in the eggs and vanilla extract.

In another bowl, mix the flour, cream of tartar, baking soda, and salt. Slowly add the dry ingredients to the wet ones and mix until everything’s combined.

❄ Pop the dough in the freezer for 15 minutes to make it easier to scoop and roll.

For the topping, stir together the Topping Ingredients in a small bowl.

Scoop about 1 1/2 tablespoons of cookie dough (a medium/#40 cookie scoop works great), and roll it into a ball.

Roll each ball in the topping twice—or more if your heart feels like it 🙂

and place them on cookie sheets, leaving at least 3 inches between each.

Bake for 8-10 minutes, just until the cookies puff up a bit. They’ll look slightly underbaked, but that’s exactly what you want!

Let them cool on the baking sheet for 10 minutes, then move them to a wire rack. (If you like your cookies a little chewier, transfer them after 8 minutes.)

Ingredients

Cookie Ingredients

  • 1 cup butter (softened)
  • 1 1/2 cups granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 2/3 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Topping Ingredients

  • 2 tsp cinnamon
  • 3-4 tbsp granulated sugar

Instructions

  • Preheat the oven to 350 F.
  • Using a mixing bowl and hand mixer, or a stand mixer, mix the butter and sugar together. Then, beat in the eggs and vanilla extract.
  • In a separate bowl, combine the flour, cream of tartar, baking soda and salt. Add the dry mixture to the wet mixture and thoroughly combine.
  • For easier scooping and rolling, place the dough in the freezer for 15 minutes.
  • In a small bowl, prep the topping by combining the Topping Ingredients.
  • Using about 1 1/2 tbsp (or a medium / #40 cookie scoop) of cookie dough, roll dough into balls.
  • Roll each cookie ball in the topping twice (or as many times as your heart wants :)), then place onto cookie sheets at least 3” apart.
  • Bake for 8-10 minutes until cookies have puffed up slightly (cookies will look underbaked – that’s okay!).
  • Cool on baking sheet for 10 minutes, then transfer to wire rack. (For a slightly chewier cookie, remove from baking sheet after 8 minutes.)
