Perfectly spiced pumpkin bars topped with a thick layer of cream cheese frosting – what’s not to love? This is one of my favorite pumpkin desserts and I hope it becomes one of yours too!

- Salted butter
- Cream cheese
- Granulated sugar
- Brown sugar
- Eggs
- Pumpkin puree
- Vanilla extract
- All-purpose flour

How To Make Pumpkin Cream Cheese Bars (Quick Overview)
The steps below are just a quick overview of how to make pumpkin cream cheese bars. The full process in detail is located in the recipe card at the end of the post.
- Use a large bowl or a stand mixer to combine the butter, cream cheese, granulated sugar, and brown sugar.

- Mix on medium-high for 5-6 minutes until fluffy.

- On low, add eggs one at a time, and beat well after each addition.

- Next add the pumpkin puree and vanilla extract. Scrape down the sides of the bowl and mix well until well-combined.
- In a small bowl, thoroughly combine the all-purpose flour, pumpkin pie spice, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix on low for 30 seconds until fully combined.

- Lightly spray the bottom of a baking dish with non-stick cooking spray, then evenly spread the batter into the prepared dish.

- Place baking dish in the oven and bake for 15-22 minutes until the edges begin to lightly brown and a toothpick inserted into the middle comes out clean. Be careful not to overbake! The pumpkin bars will firm up as they cool.
- Let the pumpkin bars cool completely on a wire cooling rack.
How to Make Pumpkin Bars Cream Cheese Frosting
- After the bars have cooled, add frosting ingredients to a bowl and beat on medium-high for 5 minutes, making sure to scrape down the sides during the process.

- Spread the frosting evenly onto the top of the pumpkin bars.

- Cut into 10 even pieces and serve.

- 1/4 cup packed brown sugar

- 1/2 tsp baking soda
- 1/4 tsp salt

- 4 1/2 oz cream cheese (softened)
- 3 tbsp butter (softened)
- 1/3 cup confectioners sugar
Instructions
- Preheat oven to 350 F.
- Use a large bowl or a stand mixer to combine the butter, cream cheese, sugar, and brown sugar.
- Mix on medium-high for 5-6 minutes until fluffy.
- On low, add eggs one at a time, and beat well after each addition.
- Next add the pumpkin puree and vanilla extract. Scrape down the sides of the bowl and mix well until well-combined.

- After the bars have cooled, add frosting ingredients to a bowl and beat on medium-high for 5 minutes, making sure to scrape down the sides during the process.
- Spread the frosting evenly onto the top of the pumpkin bars. (If you have any trouble spreading the frosting, you can microwave it for a few seconds to thin it, but make sure to refrigerate the frosted bars prior to cutting to ensure the frosting is fully set.)
- Cut into 10 even pieces and serve.
