🥦🧀 Tip #1: If you want, you can chop your broccoli into smaller pieces. I usually keep my florets on the bigger side, but some people like to chop them smaller so there’s a better soup-to-broccoli ratio.
🥦🧀 Tip #2: Use whatever cooked chicken you have on hand. Rotisserie chicken, cooked chicken breasts or thighs, or even canned chicken all work great in this soup!

🥦🧀 Tip #3: Always shred your own cheese. Pre-shredded cheese has anti-caking ingredients in it, so it doesn’t melt well and can make your soup clumpy. I got my grater at Target, but this one is pretty close!
🥦🧀 Tip #4: Keep an eye on your simmer time. Don’t walk away while your soup is simmering if you’re picky about broccoli texture. I like mine firmer and less cooked, so I watch it closely to get it just right.

Broccoli and Cheese Soup with Chicken

Ingredients
- 4 tbsp butter
- 1 medium onion (chopped)
- 2 garlic cloves (minced)
- 1/4 cup flour
- 3 cups chicken broth
- 1 cup heavy whipping cream
- 2 carrots (diced or grated)
- 1/2 tsp dijon mustard
- 1/2 tsp salt (or more to taste)
- 1/2 tsp pepper (or more to taste)
- 4 cups broccoli florets (whole or chopped into smaller pieces)
- 4 cups cooked chicken (shredded or cubed)
- 8 oz cheddar cheese (freshly grated)
Instructions
- Start by melting butter in a pot or Dutch oven over medium-low heat. Sauté the onion for about 3-5 minutes.
- Add garlic and continue to sauté for another 2 minutes. Then, incorporate flour and whisk for 2 minutes.
- Pour in chicken broth, heavy whipping cream, carrots, Dijon mustard, salt, pepper, and broccoli. Stir the mixture and let it simmer for 12-15 minutes, or until the broccoli reaches your preferred tenderness.
- Add the chicken and mix well, then gradually stir in the cheddar cheese until it is fully melted.
- Remove from heat and adjust seasoning with additional salt and pepper to taste before serving.

I had some leftover chicken and used it up in this recipe. It turned out great! The kids liked it with the chicken versus the the Panera style with no meat.
I’ll be making this quite often. It has a great balance between the cheese flavor and broccoli. I added a couple of extra cups of chicken to really load it up with protein.
