Ingredients

  • 4 tbsp butter
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 1/4 cup flour
  • 3 cups chicken broth
  • 1 cup heavy whipping cream
  • 2 carrots (diced or grated)
  • 1/2 tsp dijon mustard
  • 1/2 tsp salt (or more to taste)
  • 1/2 tsp pepper (or more to taste)
  • 4 cups broccoli florets (whole or chopped into smaller pieces)
  • 4 cups cooked chicken (shredded or cubed)
  • 8 oz cheddar cheese (freshly grated)

Instructions

  • Start by melting butter in a pot or Dutch oven over medium-low heat. Sauté the onion for about 3-5 minutes.

    I had some leftover chicken and used it up in this recipe. It turned out great! The kids liked it with the chicken versus the the Panera style with no meat.

    I’ll be making this quite often. It has a great balance between the cheese flavor and broccoli. I added a couple of extra cups of chicken to really load it up with protein.
