  6. Shredded cheddar cheese
  7. Italian seasoning
  8. Thyme

  10. Rotisserie chicken (or cooked chicken)
  11. Broccoli florets
  12. Frozen cauliflower rice
  13. Parmesan crisps or Ritz crackers

How To Make Chicken Cauliflower Rice Casserole (Quick Overview)

The steps below are just a quick overview of how to make the casserole. The full process in detail is located in the recipe card at the end of the post.

First, you’ll want to prep the veggies: the broccoli and cauliflower rice.

To prep the broccoli: Toss the broccoli florets into a microwave-safe bowl, add about 3 tablespoons of water, and cover it with a microwave-safe plate or lid. Microwave on high for 3 minutes, then carefully remove the cover, drain any extra water, and set it aside.

To prep the cauliflower (do this while the broccoli is cooking): While the broccoli’s steaming, cook the cauliflower rice following the package instructions. Drain any extra water and set that aside, too.

Now that your veggies are ready… in a large bowl, mix together the broth, heavy cream, sour cream, Italian seasoning, salt, pepper, thyme, and 1 1/2 cups of shredded cheddar cheese until smooth and combined.

For the best melt, shred your cheese by hand—store-bought shredded cheese usually has anti-caking agents that prevent it from melting well.

Add the cubed or shredded rotisserie chicken (or cooked chicken) and give it a good mix. Then toss in the steamed broccoli and cauliflower rice and stir everything together.

For the best flavor (and for convenience), I highly recommend using rotisserie chicken in this casserole. But regular cooked chicken works too!

Spread the mixture into a 9″x13″ casserole dish. Sprinkle the remaining shredded cheddar cheese on top and bake for 15 minutes.

Take it out, sprinkle on some crushed parmesan crisps (or Ritz crackers for a more buttery flavor), and bake for another 10 minutes.

Your casserole is done and ready to serve. Enjoy!

Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 cup chicken broth
  • 3/4 cup heavy whipping cream
  • 1 cup sour cream
  • 2 1/2 cups shredded cheddar cheese (divided)
  • 1 1/2 tbsp Italian seasoning
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 cups cubed or shredded rotisserie chicken (or cooked chicken, cubed or shredded)
  • 3 cups broccoli florets
  • 10- oz or 12-oz bag frozen cauliflower rice
  • 1/2 cup crushed parmesan crisps (or crushed Ritz crackers)

Instructions

  • Preheat oven to 350 F.
  • Place broccoli florets in a microwave-safe bowl. Pour 3 tablespoons of water over the broccoli, cover the bowl with a microwave-safe plate, and microwave on high for 3 minutes. Afterward, remove the plate carefully, drain any extra water, and set the broccoli aside.
  • While the broccoli is steaming, follow the package instructions to prepare the cauliflower rice. Drain any excess water and set it aside.
  • In a large bowl, combine broth, heavy whipping cream, sour cream, Italian seasoning, salt, pepper, thyme, and 1 1/2 cups of shredded cheddar cheese.
  • Add the shredded rotisserie chicken and mix well.
  • Combine the broccoli and cauliflower rice with the mixture.
  • Transfer the mixture to a 9” x 13” casserole dish.
  • Sprinkle the remaining shredded cheddar cheese on top and bake in the oven for 15 minutes.
  • Once done, take the casserole dish out and evenly sprinkle crushed parmesan crisps (or Ritz crackers) on top. Return to the oven and bake for an additional 10 minutes.
