  3. Broccoli florets (fresh is ideal, but frozen is good too!)
  4. Shredded sharp cheddar (or change the flavor by using Colby Jack cheese)
  5. Bacon
  6. Eggs
  7. Heavy whipping cream
  8. Onion powder
  9. Garlic powder
  10. Dried thyme
  11. Dried oregano
  12. Salt
  13. Pepper
  14. Parsley (for an optional garnish)

How To Make Easy Breakfast Casserole Recipe (Quick Overview)

The steps below are just a quick overview of how to make easy breakfast casserole recipe. The full process in detail is located in the recipe card at the end of the post.

  • Preheat oven and spray casserole dish with non-stick cooking spray. Set aside.
  • Over medium heat, heat the olive oil in a large, nonstick sauté pan. Add the broccoli and water and cook for 2-3 minutes, or just until the broccoli softens slightly and turns bright green. Remove from heat and thoroughly drain the broccoli.
  • Transfer the broccoli to the prepared casserole dish and spread into a uniform layer.

  • Top with shredded cheese and crumbled bacon, then set the casserole dish aside.

  • In a small bowl, whisk the eggs, heavy whipping cream, onion powder, garlic powder, thyme, oregano, and salt and pepper to taste.
  • Pour the egg mixture over the broccoli, cheese, and bacon and bake for 17-23 minutes, or until the casserole is set and lightly golden brown on top.

  • Remove the casserole from oven and let it cool for 10 minutes before slicing. If desired, sprinkle with fresh parsley before serving.

Notes About This Easy Breakfast Casserole

  • Fresh or frozen broccoli? You can use frozen broccoli (cooked and drained) in this casserole, but be aware that this may introduce additional moisture into the casserole that can affect the texture and/or cook time.
  • Switch up the flavor by changing the cheese! Feel free to swap the sharp cheddar for the cheese of your choosing. (A favorite of mine in this casserole is Colby Jack.)
  • Swap bacon for ham. Want another way to switch up the flavor? Swap the 6 slices bacon for 1/2 cup diced fully cooked ham.
