How To Make Sausage Breakfast Casserole (Quick Overview)

This recipe is super easy. Let me show you how it’s made!

Photo 1: In a mixing bowl, combine eggs, sour cream, heavy whipping cream, salt, pepper, and cheddar cheese. Use a wire whisk to blend everything well.
In a skillet over medium-low heat, cook the pork sausage until it’s fully cooked and starting to brown. Drain about 75% of the fat, leaving a bit in the skillet, and turn off the heat.
Photo 2: Use a slotted spoon to transfer the cooked sausage into the egg mixture and mix it all together.

The vegetables in this recipe are not set in stone. You can substitute the listed vegetables or add more of whatever you’d like!
Photo 3: In the same skillet where you cooked the sausage, sauté the garlic, onions, red pepper, and green pepper for about 3-4 minutes on medium heat.
Photo 4: Toss the pepper mixture into the egg mixture and mix it all together thoroughly.

Photo 5: Pour the mixture into a lightly greased 9” x 13” casserole dish. Pop the dish in the oven and bake for about 40-50 minutes, or until a toothpick inserted in the middle comes out clean.

Sausage Breakfast Casserole

Ingredients
- 2 lbs ground pork sausage
- 12 eggs (whisked)
- 1 cup sour cream
- 1/4 cup heavy whipping cream
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups Mexican-style shredded cheese (or shredded cheese of choice)
- 1 garlic clove (minced)
- 1/2 medium red bell pepper (chopped)
- 1 medium green bell pepper (chopped)
- 4 green onions (chopped)
Instructions
- Preheat oven to 350°F.
- Mix eggs, sour cream, heavy whipping cream, salt, pepper, and cheddar cheese (or shredded cheese of choice) in a bowl. Mix thoroughly.
- Cook pork sausage in a skillet over medium-low heat until browned and cooked through. Turn off the heat and carefully drain about three-quarters of the fat into a bowl. (Discard the fat or save it in the fridge for later use.)
- Remove the cooked sausage with a slotted spoon and add it to the egg mixture. Mix well.
- In the same skillet, sauté garlic, onions, red pepper, and green pepper over medium heat for 3-4 minutes.
- Combine the pepper mixture with the egg mixture and pour the mixture into a greased 9” x 13” casserole dish.
- Bake in the oven for 40-50 minutes until a toothpick inserted in the middle comes out clean.
- Allow to cool for 5-10 minutes before serving.
