Ingredients Needed for This Sausage Stuffing Recipe

Ingredient quantities for this easy sausage stuffing recipe are located in the recipe card at the end of the post.

  1. Bread (you can use regular white bread, sourdough, or any other type of bread you like to use in stuffing)
  2. Ground pork
  3. Fennel seed
  4. Butter
  5. Celery
  6. White onion
  7. Poultry seasoning – this brand is my favorite!
  8. Chicken broth
  9. Large eggs
  10. Dried parsley or fresh parsley

If you use regular white bread in this stuffing, make sure it’s quality bread with some substance to it, not super squishy, flimsy sandwich bread. Nothing against squishy sandwich bread 🙂 but it won’t hold up well in this stuffing.

How To Make Sausage Stuffing

The steps below are just a quick overview of how to make the recipe. The full process in detail is located in the recipe card at the end of the post.

First, make sure you’ve prepared your bread. It needs to be dried out so it can absorb the flavorful liquid later in the process. If your bread is fresh, place it (cubed) on a baking sheet. Bake at 275°F for 45 minutes, tossing the cubes a few times during the baking process.

Next, combine the pork and fennel seeds and cook the pork until it is fully cooked and browned. Remove it from the pan and set it aside.

Next, saute the celery and onion in butter, adding the poultry seasoning later in the process.

Add the cubed bread to a 9″ x 13″ casserole dish, then spread the vegetable mixture on top.

Mix whisked eggs, parsley, and chicken broth and pour over top. Toss carefully to combine.

Then add pork and combine again.

Cover your casserole dish with foil and bake for 25 minutes, then remove the foil and bake for 15 minutes or until the stuffing is browned on top.

Ingredients

  • 10 oz dried bread, cut into 1/2” cubes (see notes; about 8 slices of white bread; sourdough is also a great choice)
  • 2 lbs ground pork
  • 1 tsp fennel seed
  • 3 tbsp butter
  • 1 1/2 cups diced celery
  • 3/4 cup diced white onion
  • 1 1/2 tbsp poultry seasoning
  • 12 oz chicken broth
  • 3 large eggs (lightly beaten)
  • 2 1/2 tbsp dried parsley OR 1/2 cup fresh parsley

Instructions

  • Preheat oven to 350 F.
  • Combine pork and fennel seeds in a large skillet. Cook over medium heat, breaking up the pork until it is fully cooked and browned. Transfer pork mixture to a bowl and set aside.
  • In the same skillet over medium heat, melt the butter. Once melted, add celery and onion and cook until the vegetables have softened (about 5 minutes). Sprinkle poultry seasoning over mixture and cook for another 2 minutes, stirring to combine. Remove from heat.
  • Add bread pieces to a buttered 9” x 13” casserole dish, then spread vegetables on top.
  • Mix whisked eggs, parsley, and chicken broth and pour over top. Toss carefully to combine.
  • Add cooked pork and gently combine.
  • Cover with foil and bake for 25 minutes, then bake uncovered for 15 minutes or until the stuffing is browned on top.

Notes

  • To firm up fresh bread, cube it and place it on a baking sheet. Bake at 275°F for 45 minutes, tossing the cubes a few times during the baking process.
