How To Make Zucchini Pizza Bites (Quick Overview)
The steps below are just a quick overview of how to make the recipe. The full process in detail is located in the recipe card at the end of the post.

- Photo 1: Lay out the zucchini slices in the air fryer in a single layer (depending on the size of your air fryer, it’s highly likely you’ll need to do this in batches). Cook for 5 minutes.
- Photo 2: Sprinkle with salt and pepper to taste.
- Photo 3: Add marinara sauce.
- Photo 4: Add some Italian seasoning and the mozzarella cheese. (I like to kind of sloppily add the cheese to give it an extra-gooey look, but you can add your cheese a lot neater if you’d like!) If you’re throwing in pepperoni, you can add it now too.
- Bake until the cheese is fully melted.

- Take your mini pizzas out of the air fryer and place them on a plate, then repeat the process until you’ve made all the slices or run out of toppings.

Air Fryer Zucchini Pizza Bites

Ingredients
- 1 medium zucchini (sliced into 1/4” slices)
- 1/2 cup marinara sauce
- 1 cup shredded mozzarella cheese (or more if desired; shred by hand for best results)
- 1/2 cup mini pepperoni slices (or more if desired)
- non-stick cooking spray
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp Italian seasoning
Instructions
- Place zucchini slices in a single layer in the air fryer (you will need to work in batches) and lightly spray them with cooking spray. Cook for 5 minutes at 400°F.
- Season the slices with salt and pepper, then top each with about 1 tsp of marinara sauce.
- Add Italian seasoning and shredded mozzarella cheese generously. If desired, add mini pepperoni slices.
- Cook for 5-6 minutes until the cheese melts. Remove the pizza bites, place them on a plate, and repeat the process until all zucchini slices are used.
