Ingredients

  • Non-stick cooking spray
  • 1 tbsp extra-virgin olive oil
  • 1 1/2 lbs ground beef
  • 1/4 cup yellow onion (finely chopped)
  • 2 large eggs (whisked)
  • 1/2 cup finely crushed Ritz crackers
  • 1/2 tsp garlic powder
  • 1 tbsp ketchup
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Topping

  • 1/4 cup ketchup
  • Optional: 1-2 tbsp Brown Sugar

Instructions

  • Begin by preheating your oven to 350°F.
  • In a large bowl, combine all of the ingredients, making sure not to overmix.
  • Take a rimmed baking sheet and line it with parchment paper or foil. Add the meatloaf mixture onto the sheet and shape it into an 8” x 4” loaf, ensuring that it has an even thickness.
  • Bake the meatloaf for 35 minutes.
  • After 35 minutes, remove the meatloaf from the oven, brush on the topping, and return it to the oven to bake for another 15-20 minutes, or until a meat thermometer shows that the internal temperature has reached at least 165°F. If it hasn’t, continue to cook it in 5-minute increments.
  • To get a crispier outside, broil the meatloaf for 1 minute (optional).
