Tips for Making Chicken Chili Lime In The Air Fryer

The section below just outlines a few quick tips. The full process in detail is located in the recipe card at the end of the post.

💚 Tip 1: Don’t skip the preheating phase at the beginning of the recipe. It helps get the thighs super crispy on the outside.

💚 Tip 2: And don’t forget the resting phase at the end! It locks in all that juiciness in the meat.

💚 Tip 3: Add lime juice to your heart’s content. Make sure to use fresh-squeezed lime juice for the best flavor.

💚 Tip 4: Don’t be shy about cranking up the final internal temperature above 165°F!

Chicken thighs are good to eat at 165°F, but many of us (myself included) think they taste even better around 185°F to 195°F.

Why heat above 165°F? When heated to this temperature, the collagen inside the bones turns to gelatin, increasing the chicken’s juiciness!

In general, with this chicken, you can’t go wrong with sides like rice or cauliflower rice (plain or with cilantro and lime), black beans, tortilla chips, salsa, cornbread, and the like!

Air Fryer Chili Lime Chicken

Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp cayenne
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1 tsp lime zest
  • 1 tsp baking powder
  • Lime juice (freshly squeezed)

Instructions

  • If a feature on your air fryer, preheat it to 400°F. (If not, turn it on to 400°F for 4-5 minutes before Step 5.)
  • In a small bowl, mix chili powder, paprika, cumin, salt, cayenne, pepper, garlic powder, lime zest, and baking powder.
  • Pat the chicken thighs dry with a paper towel and coat them evenly with olive oil on both sides. Place them in a bowl or on a plate.
  • Sprinkle the seasoning mixture on both sides of the chicken thighs and rub it in for even coverage.
  • Transfer the chicken thighs to the air fryer basket and cook for 10 minutes.
  • Turn the chicken using tongs and continue cooking for an extra 6-10 minutes until crispy and golden brown on the outside.
  • Reduce the air fryer temperature to 375° F, squeeze lime juice to taste over the chicken, and cook for 2 minutes. Using tongs, turn the chicken over, squeeze lime juice on the other side, and cook for 2 additional minutes.
  • Check the internal temperature with a meat thermometer; it should be at least 165°F. If needed, continue cooking the chicken until it reaches the desired temperature.
  • Allow the thighs to rest for 5-10 minutes before serving. This helps to lock in the juices and keep the chicken moist.

Notes

Note that some people (myself included!) prefer the flavor of chicken thighs heated to 185°F to 195°F.
