Ingredients

  • 4 cups broccoli florets
  • 3 cups sliced carrots (sliced at a diagonal, also known as a bias cut)
  • 1 tsp Italian seasoning (or your favorite seasoning blend)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil

Instructions

  • Preheat your oven to 400 F.
  • Begin by preparing your carrots and broccoli, then place them into a large mixing bowl.
  • In a separate small bowl, mix together all of the remaining ingredients to make a savory sauce.
  • Pour the sauce into the bowl with the vegetables, making sure to coat them evenly by tossing them.
  • Transfer the coated veggies to a large, rimmed baking sheet, spreading them out in a single layer.
