Roasted Broccoli and Carrots

Ingredients
- 4 cups broccoli florets
- 3 cups sliced carrots (sliced at a diagonal, also known as a bias cut)
- 1 tsp Italian seasoning (or your favorite seasoning blend)
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400 F.
- Begin by preparing your carrots and broccoli, then place them into a large mixing bowl.
- In a separate small bowl, mix together all of the remaining ingredients to make a savory sauce.
- Pour the sauce into the bowl with the vegetables, making sure to coat them evenly by tossing them.
- Transfer the coated veggies to a large, rimmed baking sheet, spreading them out in a single layer.
- Roast the vegetables in the oven at 400 F for 15 minutes, then stir or rotate the pan before roasting them for another 10-15 minutes, or until they reach your desired level of crispiness. Enjoy!
