- Green cabbage
- Paprika
- Thyme
- Oregano
- Salt
- Pepper
- Beef stock
- Canned diced tomatoes
How To Make Beef Cabbage Soup (Quick Overview)
The steps below are just a quick overview of how to make the soup. The full process in detail is located in the recipe card at the end of the post.
- Heat olive oil in a large pot over medium-low heat. Once the oil is hot, add chopped red onion and saute until slightly translucent. Add garlic and red pepper.

- Continue to cook until the onions are fully translucent and the garlic is beginning to brown.

- Add the ground beef (crumbled) and carrots to the mixture and stir well. Turn up the heat to medium and let it cook, stirring intermittently until the beef is almost fully cooked.

- Add cabbage and stir. Cook, covered, for five minutes.

- Add diced tomatoes, paprika, and beef stock, and then thoroughly stir the mixture again. Then, bring it to a low boil.

- Reduce heat to a gentle simmer and simmer, uncovered, for 20 minutes. Stir the soup occasionally.
- After 20 minutes, remove from heat and add salt and pepper to taste. Serve and enjoy!

Ingredients

- 3/4 medium green cabbage (chopped)
- 14.5 oz can diced tomatoes
- 1 tbsp paprika
- 1 tsp thyme
- 2 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- 6 cups beef stock
