How To Make Easy White Chicken Chili
The steps below are just a quick overview of how to make the chili. The full process in detail is located in the recipe card at the end of the post.
- Add olive oil to a dutch oven or soup pot on medium-low heat. When the oil is heated, add chopped onion and sauté until the onion begins to turn translucent. Then add garlic and cook until the garlic starts to brown and the onion is translucent. (Tip: You can use a white or yellow onion for the “authentic” color, but I prefer the flavor of red.)
- Add oregano, cumin, salt, pepper, paprika, and cayenne pepper (optional) and sauté for 1 minute.
- Add chicken stock, can of green chiles, and cannellini beans. Thoroughly stir and turn heat up until mixture reaches a low boil.
- Then, reduce the heat to a gentle simmer. Simmer the chili, uncovered, stirring occasionally. Simmer for about 20 minutes until the stock has reduced by approximately half.
- Turn the heat down to medium and add frozen corn. Stir, then add heavy whipping cream, cream cheese, and shredded rotisserie chicken and cook for 5-10 minutes, stirring occasionally, until chili is fully heated through and cream cheese has fully melted.
- Remove from heat and serve topped with your favorite chili toppings.

White Chicken Chili

Ingredients
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- 1 small onion (chopped)
- 1 tsp oregano
- 1 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 4 cups chicken stock
- 4 oz can green chiles
- 1/2 cup heavy whipping cream
- 4 oz cream cheese (cubed)
- 3 cups shredded rotisserie chicken
- 2 cans cannellini beans
- 1 bag frozen corn
Instructions
- Add olive oil to a soup pot or dutch oven on medium-low heat. When the oil is heated, add chopped onion and saute until the onion begins to turn translucent. Then add garlic and cook garlic starts to brown and onion is translucent.
- Add oregano, cumin, salt, pepper, paprika, and cayenne pepper (optional) and saute for 1 minute.
- Add chicken stock, can of green chiles, and beans. Thoroughly stir and turn heat up until mixture reaches a low boil.
- Then, reduce the heat to a gentle simmer. Simmer the chili, uncovered, stirring occasionally. Simmer for about 25 minutes until the stock has reduced by at least 1/3.
- Turn the heat down to medium. Then add heavy whipping cream, cream cheese, and shredded rotisserie chicken. Cook for 10-15 minutes, stirring occasionally, until chili is fully heated through and cream cheese has fully melted.
- Remove from heat and serve garnished as desired. (Cheese, sour cream, cilantro, sliced red peppers, tortilla chips, etc. all make great garnishes!)
Notes
- You can use a white or yellow onion for the “authentic” color, but I prefer the flavor of red.
- To ensure the cream cheese fully melts, either cut it into small pieces before adding it to the soup pot or break it up with a spatula while heating the chili.
