Pecan Pie (No Corn Syrup!)

This Pecan Pie recipe is off-the-charts good and it has a little secret: no corn syrup! This results in a less gooey filling and a whole new pecan pie experience. You have to try this recipe!

I did a thing: I made a Pecan Pie without corn syrup. Is this recipe the same as every other Pecan Pie recipe out there? Nope!

But I invite you to try it because I think you will LOVE it. Instead that gooey, stick-to-your-teeth filling, this filling is denser, a little flaky, and absolutely delicious. Everyone I’ve served this to loves to sneak in a second slice.

🥧 Note

This recipe gives you the choice of using your favorite homemade pie crust recipe or a store-bought pie crust. Pick what works best for you and your schedule!

  • Preheat oven to temperature on recipe card at the end of the post.
  • To a small saucepan, add butter, sugar, and brown sugar. Bring to a simmer and heat until the mixture is golden brown (about 5 minutes), stirring frequently with a wooden spoon. (Photo 2)

🥧 Note

When done, the mixture should be able to coat the back of a spoon.

  • Remove mixture from heat. Add salt, vanilla extract, and maple extract, stirring thoroughly to combine.
  • Let the mixture cool for at least 25 minutes. The purpose of cooling it down at this step is so that eggs don’t begin to cook in the next step.
  • After 25 minutes, add eggs and whisk until the mixture is well-combined. (Photo 3)
  • To the bottom of pie crust, add chopped pecans (Photo 4), then the filling.
  • Top pie with whole pecan halves. (Photo 5)
  • Place in preheated oven and bake until top is dark brown and filling is thick, slightly bubbly, and almost set, approximately 30-40 minutes. The filling will still be slightly jiggly and firm up as it cools.
  • Cool completely before cutting into eight slices. Enjoy!
