  7. Eggs
  8. Vegetable oil

  11. Vanilla extract
  12. Zucchini
  13. Pecans or walnuts (optional; I didn’t include any in the loaf I photographed for this post)

How To Make Zucchini Bread (Quick Overview)

The steps below are just a quick overview of how to make the zucchini bread. The full process in detail is located in the recipe card at the end of the post.

This recipe is super simple. You’ll start by preheating your oven to the temperature listed on the recipe card (at the end of the post) and preparing a 9″ x 5″ loaf pan.

Next, in a bowl, mix together the flour, salt, baking powder, baking soda, and cinnamon. Set aside.

If you’re adding pecans or walnuts, toss them in at this step.

In another bowl, whisk together the sour cream, eggs, vegetable oil, granulated sugar, brown sugar, and vanilla extract until smooth. Stir in the zucchini until it’s fully mixed in.

No need to peel your zucchini before grating it!

Add the dry ingredients to the wet mixture. Stir to combine.

Be careful not to overmix. You want to stir just until everything is combined.

Pour the batter into your prepared pan…

… and bake for 50-65 minutes, or until a toothpick inserted in the center comes out mostly clean.

Let the loaf cool in the pan on a wire rack for about an hour, then take it out of the pan to cool completely.

To Store: Keep it at room temperature for up to two days or store it in the fridge for up to a week.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 2 tbsp sour cream (or Greek yogurt, plain or vanilla)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 1 1/2 cups grated zucchini
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  • Preheat oven to 350 F. Prepare a 9” x 5” loaf pan by lining it with parchment paper or greasing it.
  • In a bowl, sift flour, salt, baking powder, baking soda, and cinnamon together. (If using pecans or walnuts, stir them in at this step.) Set aside.
  • In a medium bowl, whisk together the sour cream, eggs, vegetable oil, white sugar, brown sugar, and vanilla extract until smooth. Add the zucchini and stir until fully incorporated.
  • Add the sifted dry ingredients to the wet ingredients and stir until the dry ingredients are just moistened (do not overmix).
  • Pour the batter into the prepared loaf pan and bake for 50-65 minutes until a toothpick comes out mostly clean.
  • Cool in the pan on a rack for 60 minutes, then remove from the pan to cool completely.
  • Store at room temp for up to two days or in the fridge for up to a week.
