How to Make Carrot Cake Cupcakes (Quick Overview)

First, let’s make the cupcakes! Start by preheating your oven and preparing a 12-cup cupcake pan.
To a mixing bowl, add the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and brown sugar.

Give it a good sift to combine everything.
In another bowl, add the vegetable oil, eggs, sour cream, and vanilla extract.

Whisk it all together…

… then stir in the grated carrots and whisk again.

Now, gently fold the dry ingredients into the wet mixture. Be careful not to overmix, just stir until the dry ingredients are moistened.

Spoon the batter into cupcake liners, filling them about 3/4 of the way. Here are the silicone cupcake liners I use. They’re so much easier than paper liners!

Pop the cupcakes into the oven and bake for 20-22 minutes, or until a toothpick comes out clean when you test the center. Once they’re done, take them out and let them cool completely on a wire rack.

For the frosting, you can make my homemade cream cheese frosting, or you can use storebought cream cheese frosting.

For additional toppings, you can top the cupcakes with shredded carrots, chopped nuts, caramel or maple syrup, or carrot-shaped candies.
To store:

- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon

- 2 large eggs (room temperature)
- 1/3 cup sour cream
- 1 tsp vanilla extract
- 1 1/3 cups grated carrots

- Preheat oven to 350 F and prepare a 12-cup cupcake pan with cupcake liners.
- To a mixing bowl, add flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and brown sugar. Sift to combine.
- To another bowl, add vegetable oil, eggs, sour cream, and vanilla extract. Whisk to combine, then add the grated carrots and whisk again.
- Add the dry ingredients to the wet and mix until the dry ingredients are just moistened (do not overmix).

- If desired, prepare frosting per the Cream Cheese Frosting recipe. The frosting recipe makes approximately 3 cups of frosting. For 12 cupcakes, you will need about 2-3 cups, depending on how thick of a frosting topping you like.
