Start by preheating your oven, then in a mixing bowl (or the bowl of a stand mixer), cream together the butter and sugar until smooth. Keep mixing for about 3 more minutes until it’s nice and fluffy.

Don’t soften the butter until it’s entirely soft – it should still be slightly firm.

In a separate bowl, stir together the flour, baking soda, baking powder, and salt.

Add the dry ingredients to the wet and mix everything together well.

Ingredients

  • 1 cup butter (softened to nearly room temperature)
  • 1 1/2 cups sugar (plus more for coating)
  • 1 1/2 tsp vanilla extract
  • 1 egg
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat the oven to 375 F.
  • In a mixing bowl or bowl of a stand mixer, cream the butter and the sugar until smooth, then continue to mix for another 3 minutes until the mixture is fluffy.
  • Beat in the egg and vanilla extract.
  • In a separate bowl, combine the flour, baking soda, baking powder and salt.
  • Add the dry ingredients to the wet and mix thoroughly.
  • For easier scooping, place the dough in the freezer for 10 minutes.
  • Prepare a small bowl with enough sugar to roll the cookies in. Then, shape each cookie into a 1 1/2” ball and roll in sugar to coat.
  • Place each cookie ball about 2” apart on an ungreased cookie sheet.
  • Bake cookies for 8 minutes, then cool on the cookie sheet for 5 minutes before transferring them to a wire rack to continue cooling.
