Tips for Making This Broccoli Cheddar Soup Recipe

🥦🧀 Tip #1: Make sure to freshly shred your cheese. Pre-shredded cheese contains anti-caking agents, which don’t melt well and will result in a clumpy texture. I bought my grater at Target, but this one is very similar!

🥦🧀 Tip #2: Be mindful of how long you simmer the soup. If possible, don’t put the soup on a simmer and walk away, especially if you don’t like mushy broccoli. I like to keep an eye on mine since I prefer my broccoli to be on the firmer/less cooked side.

🥦🧀 Tip #3: If desired, you can chop your broccoli into smaller pieces. I usually leave my broccoli florets on the fuller side, but some people prefer them chopped into smaller pieces so they’re more incorporated throughout the soup.

Ingredients

  • 4 tbsp butter
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 1/4 cup flour
  • 3 cups chicken broth
  • 1 cup heavy whipping cream
  • 2 carrots (diced or grated)
  • 1/2 tsp dijon mustard
  • 1/2 tsp salt (or more to taste)
  • 1/2 tsp pepper (or more to taste)
  • 4 cups broccoli florets (whole or chopped into smaller pieces)
  • 8 oz cheddar cheese (freshly grated, plus more for garnish)

Instructions

  • Begin by melting butter over medium-low heat in a pot or dutch oven. Sauté the onion for 3-5 minutes.
  • Add garlic and continue sauteing for an additional 2 minutes. Then add flour and whisk for 2 minutes.
  • Pour in chicken broth, heavy whipping cream, carrots, dijon mustard, salt, pepper, and broccoli. Stir and bring mixture to a simmer for 8-14 minutes, or until the broccoli has reached your desired level of tenderness.
  • Reduce the heat to low and gradually stir in cheddar cheese until fully melted.
  • Remove from heat. Season with additional salt and pepper to taste before serving.
