  15. To serve: shredded cheese, sour cream, tortilla chips

Want to give this soup more kick? Try using a can of fire-roasted corn or southwest corn instead of plain whole kernel corn. (Adjust the beef broth accordingly since you’ll want to retain the juices and their flavors instead of draining the corn.)

How To Make Taco Soup Recipe (Quick Overview)

This recipe is soup-er 😉 easy to make, so let’s get started!

Start by heating up a soup pot over medium heat and tossing in the ground beef. As it cooks, break it up into smaller pieces and let it brown completely. Once it’s cooked through, drain any extra fat.

Now, add all the remaining ingredients to the pot—except the salt, additional pepper, and any additional seasonings. (You’ll save those for later to customize the flavor to your exact preferences.)

Short on time? Replace all of the seasonings with 2 to 3 packets of taco seasoning.

Bring the soup to a gentle boil, turn it down to a simmer, and then let it simmer for about 10 minutes.

After 10 minutes, give it a taste test. This is your moment to adjust the flavors! Add salt, pepper, or any other seasonings you like until it’s just right. You can also add more beef broth if you prefer a brothier soup.

Ingredients

  • 1 1/2 lbs ground beef
  • 3 cups beef broth
  • 2 10-oz cans RO*TEL Original Diced Tomatoes and Green Chilis (undrained)
  • 1 15-oz can black beans (drained and rinsed)
  • 1 15-oz can whole kernel corn (drained and rinsed)
  • 2 tsp chili powder
  • 2 tsp sugar
  • 1 1/2 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp crushed red pepper (optional; will add more heat)
  • to taste: salt, additional pepper, additional seasonings

Optional Toppings

  • shredded cheese
  • sour cream
  • tortilla chips

Instructions

  • To a soup pot over medium heat, add ground beef. Break up the beef as it cooks, cooking it until cooked through and browned. Drain any excess fat.
  • Add all remaining ingredients to the pot except for the "to taste" seasonings (you’ll add those after the soup has simmered). Bring soup to just under a boil, turn down to a simmer and simmer for 10 minutes.
  • After 10 minutes, carefully taste the soup and adjust the seasonings to your preferences by adding additional salt, pepper, and other seasonings to taste. You can also add more beef broth if you prefer a brothier soup.
  • Enjoy! Serve plain or with optional toppings.
