Ingredients Needed for High Protein Taco Soup Recipe

  1. 90/10 ground beef (sirloin)
  2. Beef broth
  3. RO*TEL Original Diced Tomatoes and Green Chilis
  4. Canned black beans
  5. Canned whole kernel corn
  6. Chili powder
  7. Sugar
  8. Ground cumin
  9. Garlic powder
  10. Onion powder
  11. Pepper
  12. Dried oregano
  13. Paprika
  14. Crushed red pepper (optional)
  15. Low-fat cottage cheese
  16. To serve: shredded cheese, sour cream, tortilla chips (or Quest Chips if you want to add even more protein! the taco flavor is the perfect fit for this soup)

For an even higher-protein soup, replace the 90/10 ground beef with 99/1 ground turkey. This will increase the protein per serving from 39g to 44g!

How To Make High Protein Taco Soup (Quick Overview)

The steps below are just a quick overview of how to make this high protein taco soup. The full process in detail is located in the recipe card at the end of the post.

To a soup pot over medium heat, add the ground beef. Break it up as it cooks, stirring until fully cooked and nicely browned. Drain off any excess fat.

Next, stir in beef broth, RO*TEL, black beans, corn, and all the seasonings—except for the extra salt, pepper, and seasonings you’ll add later. Bring the soup to just under a boil, then let it simmer for 10 minutes.

This recipe produces a pretty brothy soup, which I love because not only is the soup high in protein, but the extra broth adds extra staying power. But if brothy soups aren’t your thing, feel free to cut down on the beef broth.

While the soup is simmering, blend the remaining 1/2 cup of beef broth with the cottage cheese in a blender until it’s smooth and liquid (it will look like milk).

The cottage cheese in this recipe adds an extra 6.5g protein per serving, and once it’s blended and melted, you won’t even know it’s there!

After the soup has simmered, turn the heat down to low, pour in the cottage cheese mixture, and stir constantly for 2-3 minutes until it melts.

Give the soup a careful taste and adjust the flavor to your liking with extra salt, pepper, and seasonings.

Ingredients

  • 1 1/2 lbs 90/10 ground beef (sirloin)
  • 3 1/2 cups beef broth (or 2 cups if you prefer a less brothy soup), divided
  • 2 10-oz cans RO*TEL Original Diced Tomatoes and Green Chilis (undrained)
  • 1 15-oz can black beans (drained and rinsed)
  • 1 15-oz can whole kernel corn (drained and rinsed)
  • 2 tsp chili powder
  • 2 tsp sugar
  • 1 1/2 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp crushed red pepper (optional; will add more heat)
  • 1 1/2 cups low fat cottage cheese
  • to taste: salt, additional pepper, additional seasonings

Optional Toppings

  • shredded cheeese

  • tortilla chips

Instructions

  • To a soup pot over medium heat, add ground beef. Break up the beef as it cooks, cooking it until cooked through and browned. Drain any excess fat.
  • To the pot, add 3 cups beef broth (or 1 1/2 cups for a less brothy soup), RO*TEL, black beans, corn, and all seasonings except for the additional salt, pepper, and seasonings (you’ll add those after the soup has simmered). Bring soup to just under a boil, then simmer for 10 minutes.
  • While the soup is simmering, blend the remaining 1/2 cup of beef broth with the cottage cheese in a blender until fully liquified.
  • After 10 minutes, turn the heat down to low, pour in the cottage cheese mixture, and stir constantly for 2-3 minutes until the cottage cheese melts into the soup.
  • Carefully taste the soup and adjust the seasonings to your preferences by adding additional salt, pepper, and other seasonings to taste.
  • Serve and enjoy! This soup tastes great with shredded cheese, sour cream, and tortilla chips. For an extra protein boost, serve with high-protein chips like the Quest brand (the taco flavor is a perfect fit!).

Notes

  • To increase protein: Replace the 90/10 ground beef with 99/1 ground turkey. This will increase the grams of protein per serving by 5g.
  • To save time: Replace all of the seasonings with 2-3 packets of taco seasoning.
