  1. Spring mix salad or romaine lettuce
  2. Chopped or whole pecans
  3. Crumbled feta cheese
  4. Chicken breast or rotisserie chicken
  5. Strawberries
  6. Balsamic vinegar
  7. Maple syrup
  8. Dijon mustard
  9. Olive oil
  10. Salt and pepper

Assemble all of your ingredients. This salad is particularly good when strawberries are in season!

Make the maple-balsamic vinaigrette. This is one of my favorite homemade dressings!

Assemble your four individual salads and drizzle dressing on top. Serve and enjoy immediately!

Ingredients

Dressing

  • 2 tbsp balsamic vinegar
  • 2 tbsp maple syrup
  • 1 1/2 tsp Dijon mustard
  • 1/4 cup olive oil
  • salt and pepper (to taste)

Salad

  • 8 cups spring mix salad or romaine lettuce (per serving: 2 cups)
  • 1/2 cup chopped or whole pecans (per serving: 2 tbsp)
  • 8 tbsp crumbled feta cheese (per serving: 2 tbsp)
  • 12 oz cooked chicken breast or rotisserie chicken (per serving: 3 oz)
  • 2 cups sliced strawberries (per serving: 1/2 cup)

Instructions

Dressing

  • Combine balsamic vinegar, maple syrup, and mustard in a food processor or blender, pulsing a few times to mix.
  • While the processor or blender is on low, gradually pour in the olive oil. Add salt and pepper to taste, blending on low.

Salad

  • Prepare four individual salads using the measurements per serving.
  • Top each serving of salad with about 2 1/4 tablespoons of dressing. Serve immediately.
