Optional Mix-Ins

This salad is yours to customize! Here are some optional mix-in ideas. Try one, a few, or none at all. (All of them might be flavor overload. 😉😁)

  • diced red onion
  • feta cheese
  • pecans
  • dried cranberries
  • raisins
  • diced cooked chicken
  • diced tofu
  • cooked pasta

Optionally drizzle with tahini (ground toasted sesame). You can enjoy your salad as is or on a bed of lettuce.

🥗 Serving Tip

While you can definitely eat this salad right away, if you give it a few hours in the fridge, the tomatoes and cucumbers will begin to release their juices, making it even more flavorful.

Worried about your avocado browning in the process? Prep the salad minus the avocado, let it chill ❄ in the fridge for a few hours, and dice and add the avocado right before you serve it.

Ingredients

  • 2 cans chickpeas (drained and rinsed)
  • 1 1/2 cups diced cucumber
  • 1 1/2 cups diced tomatoes
  • 1 cup cubed avocado
  • chopped fresh basil (to taste)
  • salt (to taste)
  • pepper (to taste)
  • optional mix-ins (see notes)
  • optional dressing: tahini
  • optional lettuce

Instructions

  • Add all ingredients to a bowl and toss. You can include any of the optional mix-ins, or none at all.
  • Optionally drizzle with tahini, and optionally serve over a bed of lettuce. This recipe is very customizable!
