Ingredients Needed for Cake Mix Grinch Cookies

  1. White cake mix
  2. Vegetable oil (or melted butter)
  3. Eggs
  4. Vanilla extract
  5. Green food coloring
  6. Powdered sugar
  7. Heart-shaped sprinkles – I used the red hearts from this heart sprinkle set
  8. Optional: green sugar sprinkles

Check out your cake mix box to make sure it’s 15.25 oz! Due to shrinkflation, some boxes of cake mix are smaller now.

How to Make Grinch Cake Mix Cookies (Quick Overview)

These cookies are a total breeze to make!

Start by preheating your oven, then grab a large bowl and mix together the dry cake mix, oil, eggs, and vanilla extract until it just starts to come together.

Once it’s mixed, add some green food coloring and stir until you get the shade of green you like.

As you can see below (and in the finished cookies), I made this batch a little on the lighter side and didn’t fully incorporate the green food coloring. I love the swirl effect it creates in the finished cookies. Feel free to make your cookies as light or as dark as you’d like! 💚

Cover the dough and pop it in the fridge for about an hour.

Don’t skip the chilling step! This makes the dough easier to form into balls, as well as helps make sure the final cookies have a festive crinkled look.

When you’re ready to bake, take the dough out of the fridge and preheat your oven to 350°F.

Set up a small bowl with powdered sugar for rolling the cookies. If you’re using green sugar sprinkles, pour those into another bowl.

Roll the dough into 1 ½-inch balls, coat them in the powdered sugar, and place them about 2 inches apart on an ungreased cookie sheet.

Once you’ve got a full tray of cookie balls, roll them again in either the powdered sugar or green sprinkles for a second coat.

Bake one sheet at a time for 9–11 minutes, just until the edges are set.

Make sure to bake these only one sheet at a time. More than one sheet creates too much moisture in the oven, which can also impact the crinkle look.

When they come out of the oven, carefully press a red heart onto each cookie, then transfer them to a wire rack to cool. Enjoy!

Ingredients

  • 1 box white cake mix (15.25 oz)
  • 7 tbsp vegetable oil (or melted butter)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • green food coloring
  • 3/4 cup powdered sugar
  • heart-shaped sprinkles
  • green sugar sprinkles (optional)

Instructions

  • In a large bowl, stir dry cake mix, oil, eggs, and vanilla extract until the mixture starts to combine. Then, add green food coloring and fully combine until the mixture is your desired shade of green.
  • Cover dough and refrigerate for 1 hour.
  • Remove dough from fridge and preheat oven to 350 F.
  • Prepare a small bowl with the powdered sugar to roll the cookies in. If using green sugar sprinkles, prepare a second bowl with the green sprinkles.
  • Shape each cookie into a 1 1/2” ball and roll in sugar to coat, then place each cookie ball about 2” apart on an ungreased cookie sheet.
  • After preparing a sheet of cookie balls, roll each one again in either powdered sugar or green sugar to give them a second coating.
  • Bake cookies one sheet at a time for 9-11 minutes or until the edges are set. Remove from the oven, place a red heart on each cookie, then place the cookies on a wire rack to continue cooling.

Notes

You can make these cookies as light or dark green as you’d like! I like to mix the food coloring slightly unevenly so the cookies have multiple green shades throughout them.
