How To Make Buffalo Chicken and Rice Casserole

Drain any excess water from the cauliflower and set aside.

Buffalo Chicken Casserole with Cauliflower Rice

Ingredients
- 12 oz bag frozen riced cauliflower
- 3 cups rotisserie chicken, or cooked chicken breast (shredded)
- 8 oz cream cheese (room temperature)
- 1/2 cup sour cream
- 1/4 cup ranch dressing
- 2 cloves garlic (crushed)
- 1/3 cup Frank’s RedHot Wings Buffalo Sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups Mexican blend shredded cheese
Instructions
- Preheat your oven to 350°F.
- Cook the riced cauliflower in the microwave according to the instructions on the bag. After microwaving, drain any excess moisture and set aside.
- In a large bowl, combine cream cheese, sour cream, ranch dressing, garlic, buffalo sauce, salt, pepper, and half of the shredded cheese. You can either mix this by hand or use a hand mixer on low.
- Gently fold in the shredded rotisserie chicken and cooked riced cauliflower into the mixture.
