How To Make Chicken & Zucchini Casserole
The steps below are just a quick overview of how to make the casserole. The full process in detail is located in the recipe card at the end of the post.
Preheat your oven to temperature on recipe card (at the end of the post). Prepare ingredients.

Spread the zucchini and shredded chicken evenly at the bottom of a casserole dish.

When I make this casserole, I use an 8″ x 10″ casserole dish, but it will also fit in a 9″ x 9″ or 8″ x 8″.
In a medium-sized bowl, combine the butter, eggs, heavy whipping cream, Italian seasoning, salt, pepper, and shredded parmesan cheese. Use a hand mixer to blend them well.

Pour the mixture onto the casserole dish, covering the zucchini and chicken. Use a fork or spatula to toss the mixture, ensuring the zucchini and chicken are evenly coated.

Add shredded cheese on top, then sprinkle with crushed parmesan crisps.

Bake for 35-40 minutes, then serve!

- 1 1/2 cups shredded Mexican cheese
- 1/2 cup parmesan crisps (crushed)
Instructions
- Preheat your oven to 350 F.
- Spread the zucchini and shredded chicken evenly at the bottom of a casserole dish (I used an 8" x 10", but you can also use a 9" x 9" or 8" x 8").
- In a medium-sized bowl, combine the butter, eggs, heavy whipping cream, Italian seasoning, salt, pepper, and shredded parmesan cheese. Use a hand mixer to blend them well.

Notes
- For those who prefer a firmer texture, leave the zucchini unpeeled. If you’re sensitive to texture, feel free to peel it and/or dice it.
