  1. Boneless, skinless chicken breasts
  2. Baking powder
  3. Salt and pepper
  4. Olive oil
  5. White onion
  6. Zucchini
  7. Yellow squash
  8. Red bell pepper
  9. Cornstarch
  10. Soy sauce
  11. Garlic cloves
  12. Ginger
  13. Sugar (want to cut down on your sugar intake? use a sugar substitute here instead!)
  14. Apple cider vinegar
  15. Red pepper flakes
  16. Cumin
  17. Chicken broth
  18. Green onions
  19. Sesame seeds
  20. Cooked rice (optional; you can also serve this stir fry over a bed of cooked cauliflower rice)

How To Make Chicken & Zucchini Stir Fry (Quick Overview)

The steps below are just a quick overview of how to make the recipe. The full process in detail is located in the recipe card at the end of the post.

Gather your ingredients. Make sure you’ve pre-chopped everything and have it ready to go.

You’re going to first cook the chicken, then the veggies, then make the sauce, then combine everything again at the end.

Season the chicken per the recipe card (at the end of the post) and then heat a large skillet. Add olive oil and seasoned chicken. Stir every once in a while until it’s fully cooked through (use a food thermometer to check it’s hit at least 165°F).

Once done, transfer the chicken to a dish and set it aside.

In the same skillet, add the remaining olive oil along with the onion. Let it cook for about a minute, stirring often, then toss in the zucchini, squash, and red pepper.

Cook, stirring occasionally, until the veggies are tender but still have a little crunch.

Transfer them to the same dish as the chicken and set aside.

Now it’s time to make the sauce! Turn the heat down to medium and add the soy sauce, garlic, ginger, sugar, olive oil, apple cider vinegar, red pepper flakes, and cumin. Let it simmer.

Next, pour in the chicken broth and sprinkle the cornstarch over the top. Give it a good stir and let it simmer for another couple of minutes until the sauce thickens.

Add the cooked chicken and veggies back into the skillet. Keep it on the heat until everything is warmed through.

Take it off the heat, plate it up, and sprinkle with green onions and sesame seeds. If you want, serve it over some cooked rice for a complete meal. Enjoy!

Ingredients

Stir Fry Base

  • 1 lb cubed chicken breasts
  • 1 tbsp baking powder
  • salt and pepper to taste
  • 2 tbsp olive oil (divided)
  • 1 small white onion (julienned)
  • 2 medium zucchini (halved, then cut into 1/4” slices)
  • 1 medium yellow squash (halved, then cut into 1/4” slices)
  • 1 large red bell pepper (destemmed, deseeded, and cut into matchsticks/julienned strips)

Stir Fry Sauce

  • 1 tbsp cornstarch
  • 3 tbsp soy sauce
  • 2 garlic cloves (crushed)
  • 1 tbsp minced ginger
  • 3 tbsp sugar
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/4 tsp red pepper flakes
  • 1 tsp cumin
  • 1/4 cup chicken broth

Garnish/To Serve

  • 3 green onions (chopped into 1/2” pieces)
  • 2 tsp sesame seeds
  • cooked rice (optional; for serving)

Instructions

  • Season chicken with baking powder, salt, and pepper.
  • Place a large skillet over medium-high and add 1 tbsp olive oil and seasoned chicken. Cook for about 5-7 minutes, stirring several times, until the chicken is evenly cooked through (test the internal temperature with a food thermometer to ensure it has reached at least 165 F). Transfer chicken to a large dish and set aside.
  • Add remaining 1 tbsp olive oil and the onion to the skillet. Cook for one minute, stirring frequently, then add zucchini, squash, and red pepper. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender-crisp. Transfer to the same dish as the chicken and set aside.
  • Reduce the heat on the stovetop to medium and add the soy sauce, garlic, ginger, sugar, olive oil, apple cider vinegar, red pepper flakes, and cumin. Bring to a simmer.
  • Add the chicken broth, then sprinkle the cornstarch over the top. Stir, then simmer for an additional two minutes or until sauce thickens.
  • Add cooked vegetables and chicken and keep on heat until everything is heated through.
  • Remove from heat, plate, and garnish with green onions and sesame seeds. If desired, serve over a bed of cooked rice.
