These ingredients make up the base of this salad. You’re welcome to also add optional mix-ins, which include:

  • Cubed Swiss cheese
  • Cooked and crumbled bacon
  • Raisins

You can include any or all of these; they all lend their own unique flavor addition!

How To Make Corn Salad with Chicken (Quick Overview)

Prepare the dressing and place the chicken and vegetables in a bowl.

Recipe Notes

  • If you can’t find English cucumbers, you’ll need to peel and deseed your cucumbers first. English cucumbers can go in just as they are!
  • You can use fresh or canned corn in this recipe.
  • For convenience, you can use rotisserie, canned, or baked chicken.

Ingredients

Salad Ingredients

  • 1 15.25 oz can of corn (drained; or 1 3/4 cups fresh)
  • 2 cups cubed cooked chicken (rotisserie, canned, or baked)
  • 2 cups diced English cucumbers (see notes)
  • 2 cups halved grape or cherry tomatoes
  • Optional additions: cubed Swiss cheese, cooked and crumbled bacon, raisins

Dressing Ingredients

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2-4 tbsp powdered sugar (depending on your sweetness preferences)
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste (optional)

Instructions

  • In a small bowl, prepare the dressing by combining all Dressing Ingredients.
  • Add all Salad Ingredients to a large bowl and mix thoroughly.
  • Pour the dressing over the salad and toss to evenly coat.
  • Enjoy immediately or refrigerate for up to three days.

Notes

  • If you can’t find English cucumbers, you can use regular cucumbers, but they should be peeled and deseeded first.
  • If adding any of the optional ingredients, add more dressing if desired.
  • Serves 8 if served as a side dish; serves 4 if served as a main meal.
