  • Yukon Gold Potatoes (although I highly recommend these, you can use red potatoes if you can’t find Yukon Gold)
  • Red or sweet onion
  • Celery
  • Mayonnaise
  • Pickle relish
  • Mustard
  • Apple cider vinegar
  • Salt and pepper
  • Paprika
  • Fresh dill
  • Hard-boiled eggs (optional)

How To Make Potato Salad (Quick Overview)

The steps below are just a quick overview of how to make the salad. The full process in detail is located in the recipe card at the end of the post.

🥔 First, you will prepare the potatoes. This process is outlined in the recipe card at the end of the post. You’ll end up with your chopped, cooled potatoes, and then you’ll move onto preparing the salad!

To a bowl, add mayonnaise, pickle relish, mustard, apple cider vinegar, salt, pepper, and paprika.

Mix everything together.

Toss in the onion, celery, hard-boiled eggs, and fresh dill, and mix everything together really well.

(yes, if you look closely, this photo is missing fresh dill! 🤦‍♀️ I forgot it while prepping the salad for these photos, but I typically add it)

Add the chopped potatoes to the dressing and gently toss until every piece is nicely coated.

Feel free to add extra paprika and fresh dill on top.

Cover it up and let it chill in the fridge for about four hours before serving.

Ingredients

  • 4 lbs Yukon Gold potatoes (or red potatoes)
  • 2 cups mayonnaise
  • 1/2 cup pickle relish
  • 1 tbsp mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp paprika
  • 1 tbsp fresh dill
  • 1 small red or sweet onion (chopped or diced)
  • 2 celery stalks (chopped or diced)
  • 3 peeled hard-boiled eggs (chopped or diced)

Instructions

  • First, prepare the potatoes by quartering them and placing them into a large pot with 1” of water covering them. Bring to a boil, then reduce to a simmer. Simmer for 13-15 minutes, or until fork tender.
  • When the potatoes are done, drain immediately and remove any loose peels. Chop them into 1/2” chunks (or a different size depending on your preferences). Set aside to cool.
  • In a bowl, combine mayonnaise, pickle relish, mustard, apple cider vinegar, salt, pepper, and paprika.
  • Add onion, celery, hard-boiled eggs, and fresh dill to the mayonnaise mixture and thoroughly combine.
  • Add chopped potatoes to dressing and gently toss until thoroughly coated with mayonnaise mixture.
  • Optionally top with additional paprika and fresh dill.
  • Cover and refrigerate for four hours before serving.
