Photo 1: Preheat oven to the temperature listed on the recipe card (at the end of the post), then add all ingredients except 1/4 cup shredded Cheddar cheese to a large bowl.

Photo 2: Mix all ingredients thoroughly.

Photo 3: Add mixture to prepared casserole dish, ensuring the ingredients are spread evenly across the bottom.

Photo 4: Add remaining cheddar cheese and place in preheated oven.

How to Make This a Dump-and-Bake Casserole

You don’t really need to dirty a bowl for this casserole; I just find it easier to stir in a deeper bowl. Feel free to skip the bowl and dump all of the ingredients (except for the final 1/4 cup Cheddar cheese) into your casserole dish!

Bake until liquid has absorbed and the top begins to brown. Serve seasoned with salt and pepper to taste.

Ingredients

  • 4 cups diced yellow squash (about 2 1/2 medium squash)
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 cups vegetable or chicken broth
  • 1/2 cup diced yellow onion
  • 1 egg (beaten)
  • 3/4 cup shredded Cheddar cheese (plus 1/4 cup for topping)
  • 1 cup instant white rice (uncooked)
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Preheat oven to 375 F and prepare a 9” x 9” or 8” x 10” baking dish by spraying it with non-stick cooking spray.
  • Into a large bowl, add all ingredients (except for Cheddar cheese reserved for topping). Mix thoroughly to combine.
  • Add mixture to prepared baking dish and sprinkle with remaining 1/4 cup Cheddar cheese. *see notes for alternative prep method
  • Bake for 35 minutes until liquid has absorbed and cheese topping has browned.
  • Serve and season with additional salt and pepper to taste.

Notes

*Alternative prep method: As this casserole bakes, the rice at the top of the dish becomes crispy. If you would prefer this not to happen, leave off the cheese in Step 3, and halfway through baking, stir the top layer of the casserole under. Then, add the cheese for the second half of the baking process.
