Lemon Pepper Chicken Thighs

Ingredients
- 3 bone-in, skin-on chicken thighs (about 1 1/4 lbs)
- 1 tbsp olive oil
- 1 tbsp lemon pepper seasoning
- 1/2 tsp garlic powder
- 1/2 tbsp baking powder
- 1 tsp salt
Instructions
- For best results, preheat your air fryer to 400 F for 5-6 minutes before placing the chicken thighs into the air fryer.
- Combine all the dry ingredients in a small bowl.
- Place chicken thighs onto a clean plate. Pat the thighs dry to remove any moisture and then coat them evenly on both sides with olive oil.
- Evenly sprinkle the seasoning mixture onto both sides of the chicken thighs and rub in to coat.
- Place the chicken thighs into the air fryer basket. Cook at 400 F for 10 minutes.
- After 10 minutes, use tongs to carefully flip the thighs over. Then cook for another 6-10 minutes, until the outside of the chicken is crispy and browned.
- Check the internal temperature of the chicken thighs to make sure they have reached at least 165 F. Note that some people (myself included!) prefer the flavor of chicken thighs that are heated to 185-195 F. If needed, return the thighs to the air fryer until they reach your desired temperature.
- Let rest for 5-10 minutes, then serve and enjoy!
