How To Make Beef Stew (Quick Overview)

Start by grabbing a Dutch oven or a large pot and adding some olive oil. Toss in the stew meat…

… garlic, salt, pepper, and flour. Give everything a good mix so the meat is nicely coated with the flour and oil.

Turn the heat to medium and cook the meat, stirring it around, until it’s browned.

Next, add the celery, onion, beef broth, water, and, if you’re feeling fancy, a splash of red wine. Don’t forget the dried rosemary and bay leaf!

Bring it all to a boil, then lower the heat to a simmer, cover it up, and let it cook for until the stew darkens and starts to thicken a bit.
After that, uncover the pot and toss in the carrots and potatoes.

Let it simmer for another 25-30 minutes until everything—carrots, potatoes, and beef—is tender and just how you like it.
If you want the stew a bit thicker: mix up the slurry ingredients in a bowl and slowly stir them into the stew. Add a little at a time, stirring well, until it’s the perfect consistency for you. And voilà, your stew is ready to enjoy!

Beef Stew

Ingredients
- 3 tbsp olive oil
- 2 lbs cubed beef stew meat
- 2 garlic cloves (crushed)
- 1 tsp salt
- 1 tsp pepper
- 1/4 cup flour
- 1 celery stalk (chopped)
- 1 medium white onion (chopped)
- 4 cups beef broth
- 2 cups water
- 1/2 cup red wine (optional)
- 1 tsp dried rosemary
- 1 bay leaf
- 3 large carrots (peeled and cut into 1/2” rounds)
- 1 lb potatoes (peeled and cubed)
Slurry (to thicken)
- 2 tsp cornstarch
- 1/4 cup water
Instructions
- To a Dutch oven or large pot, add olive oil. Then add the stew meat, garlic, salt, pepper, and flour. Toss the meat in the pot with the flour and oil to coat the meat thoroughly.
- Turn the heat to medium and cook the meat until it’s browned, tossing it frequently.
- Add the celery, onion, beef broth, water, red wine (optional), dried rosemary, and bay leaf. Bring the mixture to a boil, then turn it down to a simmer and cover. Simmer for 55-65 minutes until the stew has darkened and slightly thickened.
- Uncover, add carrots and potatoes, and simmer for 25-30 minutes until carrots, potatoes, and beef reach your desired softness.
- To thicken the stew, combine the slurry ingredients in a bowl. Slowly add the mixture to the stew, stirring thoroughly between each addition, until the stew is your desired thickness. (Add as much or as little of the mixture as needed.)
