Ingredients

Base Ingredients

  • 8 oz cream cheese (softened)
  • 1 stick (4 oz) butter (softened)
  • 1 cup powdered sugar (or more to taste)
  • 1 cup creamy peanut butter

Topping Ingredients

  • 1 cup milk chocolate chips
  • 1 tbsp refined coconut oil

Instructions

Base Instructions

  • Combine cream cheese, butter, and powdered sugar in a large bowl. Using a hand mixer, whip the mixture for 2-3 minutes on high until light and fluffy.
  • Add peanut butter and beat again until smooth and well combined. Taste and add more powdered sugar if desired. The mixture will be very thick. If you need to thin it out slightly to make it more spreadable, mix in water 1 tsp at a time (but don’t thin it out too much).
  • Line an 8” x 8” pan with wax or parchment paper and spread mixture evenly into the pan, making the top as smooth as possible.
  • Freeze for 1 hour, remove from freezer, and immediately make the chocolate topping.

Topping Instructions

  • Combine chocolate chips and coconut oil in a large microwave-safe bowl.
  • Heat in the microwave at 50% power for 45 seconds. Take out the bowl and stir the chocolate well with a spatula, letting it melt naturally.
  • Heat again for 15 seconds at full power, then stir again.
  • If necessary, microwave in 10-second intervals until the chocolate is fully melted. Be sure not to overheat!

Final Dessert Instructions

  • Remove the peanut butter base from the freezer.
  • Pour chocolate topping on top, as evenly as possible, tilting the pan if necessary.
  • Chill in the fridge for ten minutes or until the topping has fully hardened.
  • Remove pan from the fridge and cut into 20 pieces. (If you have difficulty cutting it, let it thaw slightly on the counter. You can also warm the tip of your knife in hot water.)
