How To Make Corn Casserole 🌽

The steps below are just a quick overview of how to make the recipe. The full process in detail is located in the recipe card at the end of the post.

Whisk eggs in a large bowl, then add the sour cream and melted butter. If you’re adding sugar or any other seasoning (see the tips below), add it here.

How to Customize Corn Casserole

  • Want to make this a sweet casserole? Add 1-2 tbsp sugar. I’ve experimented with up to 4 tbsp (1/4 cup) sugar, but I personally found it too sweet, so my go-to is 2 tbsp. (But if your heart says to add more, go for it!)
  • Want to make this a savory casserole? Skip the optional sugar and instead add salt and pepper to taste.
  • Want to make this casserole entirely your own? This is one of those dishes that is practically impossible to mess up. Some people add shredded cheese, honey instead of sugar, diced veggies, seasoning packets… pretty much anything goes! I’d love to hear your variations in the comments.

Mix to combine, then add drained whole kernel corn and undrained cream corn.

Mix again, add the corn muffin mix, and stir to combine.

Add the mixture to a lightly buttered casserole dish (I used an 8″ x 8″).

Bake for 45-50 minutes, until the edges are golden brown.

Serve and enjoy! This cornbread tastes amazing on its own, or you can serve it topped with butter, honey, etc.

Ingredients

  • 2 eggs (room temperature)
  • 3/4 cup sour cream (room temperature)
  • 4 oz (1 stick) butter (melted), plus extra for baking
  • 1-2 tbsp granulated sugar (optional)
  • 1 15.25 oz can whole kernel corn (drained)
  • 1 14.75 oz can cream corn (NOT drained)
  • 1 8.5 oz box Jiffy Corn Muffin Mix

Instructions

  • Preheat oven to 350 F and lightly butter an 8” x 8” casserole.
  • Add room-temperature eggs to a large bowl and lightly whisk, followed by the sour cream, melted butter, and sugar (optional). Whisk to combine, then add the whole kernel corn (drained) and cream corn (undrained). Stir to combine.
  • Add the corn muffin mix and stir until well combined.
  • Add the mixture to the casserole dish and bake for 45-50 minutes, until the edges are golden brown (it's okay if the center is still slightly jiggly; the casserole will continue to cook after you've removed it from the oven).

Notes

  • A common version of this recipe uses 1 cup sour cream, but I’ve reduced it to 3/4 cup to make the cornbread a little firmer. If you like a little more jiggle to your casserole, feel free to add the full 1 cup.
  • If you prefer your cornbread on the sweeter side, add 1-2 tbsp sugar. Or, you can go the savory route and add salt and pepper to taste.
