Mix to combine, then add drained whole kernel corn and undrained cream corn.

Add the mixture to a lightly buttered casserole dish (I used an 8″ x 8″).

Bake for 45-50 minutes, until the edges are golden brown.

Cornbread Casserole

Ingredients
- 2 eggs (room temperature)
- 3/4 cup sour cream (room temperature)
- 4 oz (1 stick) butter (melted), plus extra for baking
- 1-2 tbsp granulated sugar (optional)
- 1 15.25 oz can whole kernel corn (drained)
- 1 14.75 oz can cream corn (NOT drained)
- 1 8.5 oz box Jiffy Corn Muffin Mix
Instructions
- Preheat oven to 350 F and lightly butter an 8” x 8” casserole.
- Add room-temperature eggs to a large bowl and lightly whisk, followed by the sour cream, melted butter, and sugar (optional). Whisk to combine, then add the whole kernel corn (drained) and cream corn (undrained). Stir to combine.
- Add the corn muffin mix and stir until well combined.
- Add the mixture to the casserole dish and bake for 45-50 minutes, until the edges are golden brown (it's okay if the center is still slightly jiggly; the casserole will continue to cook after you've removed it from the oven).
Notes
- A common version of this recipe uses 1 cup sour cream, but I’ve reduced it to 3/4 cup to make the cornbread a little firmer. If you like a little more jiggle to your casserole, feel free to add the full 1 cup.
- If you prefer your cornbread on the sweeter side, add 1-2 tbsp sugar. Or, you can go the savory route and add salt and pepper to taste.
