Ingredients

  • 1 lb ground turkey
  • 1 tbsp homemade taco seasoning
  • 6 cups romaine lettuce or iceberg lettuce (chopped)
  • 1/4 cup diced red onions
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup corn (drained and rinsed)
  • 1/2 cup shredded cheddar cheese or taco blend cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup cubed avocado
  • sour cream (optional)
  • tortilla chips (optional)

Instructions

Step 1: Taco Meat Prep

  • Heat a large skillet over medium-high heat. Once hot, add crumbled ground turkey.
  • Cook the turkey thoroughly, then lower the heat. Evenly sprinkle taco seasoning over the turkey, mix well, and let it cook for an additional 1-2 minutes until the mixture thickens slightly.
  • Remove the skillet from heat and allow the taco meat to cool for at least 5 minutes before assembling the taco salad.

Step 2: Taco Salad Assembly

  • Prepare the salad with all the ingredients, adding the turkey last. You can serve the salad with the ingredients separated, as shown in the photos, or mix them to resemble the inside of a taco.

    I made this to take to a friend’s cottage for dinner. The combination of flavours was delicious. Although the presentation with all ingredients separated was beautiful, it was awkward and messy to serve from the platter. Next time I will keep the ingredients in their separate bowls and let everyone “build” their own plates. I, definitely, will be making this again, however.
