Cucumber Tomato Salad

Ingredients
- 1 large cucumber (sliced into half moons)
- 6 roma tomatoes (halved, then quartered, then halved)
- 1/2 medium red onion (sliced into half moons or thinly sliced)
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp Italian seasoning (or 3 tbsp fresh herbs of choice)
- 1 tbsp sugar (optional)
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Add all vegetables to a large mixing bowl and lightly toss them to mix.
- To a small bowl, add olive oil, balsamic vinegar, sugar (optional), Italian seasoning, salt, and pepper. Mix thoroughly.
- Pour the dressing over the vegetables and toss until thoroughly coated.
- Serve immediately, or you can cover it and refrigerate it for about an hour to allow the flavors to intensify.
