  • You’ll love the flavor Italian sausage brings to this dish. Once you start making your stuffed peppers with ground Italian sausage, it’s hard to go back to ground beef! In my opinion, these just taste so much better.
  • They can be made with regular rice or cauliflower rice. They taste great either way! If you’re looking for dinner options lower in carbs, cauliflower rice is a great substitute in this dish.

  3. Rice or cauliflower rice
  4. Garlic
  5. Yellow onion
  6. Ground Italian sausage
  7. Tomato sauce
  8. Salt
  9. Pepper

  11. Mozzarella cheese

How To Make Sausage Filled Peppers (Quick Overview)

The steps below are just a quick overview of how to make the stuffed peppers. The full process in detail is located in the recipe card at the end of the post.

You’ll start by preparing and roasting your bell peppers.

I typically use red bell peppers, but you can also use orange, yellow, or green.

💗 Photo 1: Sauté garlic and onion in olive oil until fragrant, then add the rice or cauliflower rice.

These stuffed peppers can be made with regular rice or cauliflower rice. I used cauliflower rice in the photos in this post, but I love making it with regular rice too! Use whatever you’re in the mood for – the end result will be delicious either way.

💗 Photo 2: While you’re making the filling, the peppers will be roasting. Because the filling will be fully cooked when you add it to the peppers later, the baking step is really just to warm up the filling and melt the cheese.

So, the texture you roast the peppers to at this step is pretty close to their final texture. Roast them until you’re happy with the texture! Some people like them quite soft, and some prefer them on the firmer side.

When they’re done roasting, pull them out of the oven.

💗 Photo 4: Remove skillet from heat. Stir in tomato sauce and half of the mozzarella cheese.

💗 Photo 5: Fill peppers with the filling.

💗 Photo 6: Sprinkle remaining cheese on top and roast. As noted above, the goal of this step isn’t to cook the peppers a lot more, but just to re-warm the filling and, most importantly, melt that glorious cheese!

These peppers will look their best if you shred the cheese by hand (since pre-shredded cheese contains anti-caking agents that keep the cheese from melting fully), but pre-shredded will taste just as good if that’s what you have on hand.

Sausage Stuffed Peppers

Ingredients

  • 3 large red bell peppers (destemmed, deseeded, and membrane removed)
  • 1 tbsp olive oil (plus extra for baking)
  • 1 cup cooked rice OR 1 cup cauliflower rice (cooked, cooled, and drained)
  • 2 cloves garlic (minced)
  • 1 small yellow onion (finely chopped)
  • 1 lb ground Italian sausage
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
  • 8 oz can tomato sauce
  • 1 1/2 cups shredded Mozzarella cheese (divided)

Instructions

  • Preheat your oven to 375°F.
  • Gently coat the inside and outside of the peppers with olive oil, then place them upside down in a baking dish or on a sheet pan.
  • Roast for 20-25 minutes, depending on your preferred softness for the stuffed peppers. (Once done, you will want to remove them from the oven and set them aside, but continue with the filling steps while they roast.)
  • Sauté the garlic and onion in olive oil until they start to become fragrant, then add the cooked rice or cooked cauliflower rice and mix thoroughly.
  • Next, add the Italian sausage, salt, pepper, and Italian seasoning to the skillet. Stir to combine and cook until the sausage is browned.
  • Take the skillet off the heat and stir in the tomato sauce along with 3/4 cup of Mozzarella cheese.
  • Turn the roasted peppers upright and fill them with the stuffing mixture. Top with the remaining 3/4 cup of Mozzarella cheese.
  • Place them back in the oven and bake for 15-20 minutes, or until the cheese is melted and the stuffing is heated through.
  • If desired, finish under the broiler for 30 seconds to 2 minutes to brown the mozzarella, but watch it very carefully – it can quickly go from browned to burnt!
